Chicken Adobo

3 1/2 – 4 lbs chicken
1/2 cup soy sauce
1/2 cup vinegar
6 cloves garlic, minced
1/2 tbsp black pepper corns
5-6 bay leaves
1/3 tsp red pepper flakes
Directions
- In a small pot, combine soy sauce, vinegar, garlic, black pepper corns and red pepper flakes. Stir until all ingredients are well blended. Then, add the chicken one piece at a time, turning it so it absorbs the marinade. Then, refrigerate for at least an hour or overnight for best results.
- After an hour, place the pot on the stove and bring it to a boil. Once it boils, lower the stove to medium heat and simmer for 25 minutes covered. Then while uncovered, continue cooking for another 25 minutes or until the sauce is thicker in consistency. Occasionally mix the chicken in the pot making sure that the sauce is evenly distributed.
- Remove from heat. Serve over freshly cooked rice and garnish with toasted garlic.
Notes
- For a more authentic Filipino taste, use either Silver Swan or Datu Puti soy sauce and vinegar. This can be purchased in most Asian groceries.
